Tortilla Soup
- 2 tbsp vegetable oil
- 2 tbsp butter
- 1 onion chopped
- 2-3 garlic cloves (pressed)
- 1 Bell pepper chopped (any color)
- 8 cups of chicken broth (Made with 3 Knorr chicken cubes & 8 c of hot water)
- 3 Chicken breast halves
- Montreal chicken seasoning
- Diced tomatoes ( 1 can or 1 large tomato)
- Jar of salsa (or 1 1/2 cup of homemade salsa)
- 1 cup of sour cream
- Red pepper flakes
- 1 tsp cumin
- Chopped cilantro
- Shredded Cheese
- Tortilla Chips or homemade strips (corn and/or flour tortillas cut into strips & deep fried in oil)
- Heat butter and oil in a large pot. Add ingredients 3-5 and stir often while preparing the chicken broth. Add the broth and let it come to a light boil while you oil and heat a frying pan, slice the chicken into bite sized pieces or strips and season with montreal chicken seasoning. Put the seasoned chicken into the heated frying pan and put a lid on it, but stir it frequently. Add ingredients 9-13 to the boiling broth. Stir it in and let it just begin to boil then turn it down to low and put a lid on it to simmer. When the chicken is fully cooked add it to the soup.
- To serve, ladle some soup into a bowl and top with ingredients 14-16.
