Ten Bean Stew

  • 2-3 cups of 10 bean mix
  • 2 Knorr chicken broth cubes
  • Ground Italian sausage
  • 1 can whole kernel corn
  • 2 tomatoes diced
  • 1 diced bell pepper
  • 1 red onion diced
  • 2-3 green onions (for garnish)
  • Chopped cilantro (for garnish)
  • Salt & pepper
  • Shredded cheese
  1. The 10 bean mixture can be found in the bulk food section of the grocery store, and sometimes in pre-sorted packages in the dried beans section of the grocery store. Dump 2-3 cups of the bean mixture into a large crockpot and fill the crockpot at least 2/3 full of water. On the stove, bring to boil about a cup or 2 of water. The measurement is not important because you are just going to use it to dilute 2 Knorr chicken broth cubes before pouring the mixture into the crockpot. This ensures that the cubes are fully dissolved and don’t stay in concentrated pieces in the crockpot. In a frying pan, fry the Italian sausage meat until cooked all the way and then dump it into the crockpot. Dump in a can of whole kernel corn and 2 diced tomatoes. A can of diced tomatoes can be substituted . Mix it all up and let it cook on high for the day. When you are ready to eat, dice up a bell pepper, some green and red onion and stir it to the mixture. This gives it a nice crunchy texture to offset the soft beans. Sprinkle some cheese and cilantro on top and serve with cheese quesadillas or just tortillas.
